QUICK! Just a couple of days to make those cookies for Santa, and you don't have much time because you're still searching frantically for Zhu Zhu Pets! Mama, don't you dare buy that tube of refrigerated dough that's nearly impossible to cut into shapes (and doesn't taste homemade, no matter what the label says). Don't bother with a homemade batch of sugar cookies that are too sweet and will end up buried in the bottom of the trash. Hey, if you and your kid are going to make those cookies for Santa, then they should be something YOU actually want to eat, right? I mean, afterall, it will be YOU standing in that Toys R Us line in the morning. You deserve a tasty treat.
I have just the right cookie recipe that is so easy, it should put you on the Naughty List just for lack of effort. And they're so good, you won't have to lie when you tell your kid that Santa ate them all. This Shortbread Recipe is far tastier than sugar cookies. And the smell, ohhhh the smell. Heavenly. It's been featured on the Playground before. I'm bringing it back just in time for St. Nick. Go on now, break out the apron and holiday cookie cutters. "Santa" is going to enjoy this (wink, wink).
SHORTBREAD SUPREME
INGREDIENTS
- 1 cup butter
- 1/2 cup white sugar
- 2 cups sifted all-purpose flour
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, beat the butter and sugar with an electric mixer until light and fluffy. Stir in flour by hand until the dough is smooth. Extra flour can be added if the dough is not stiff enough to roll out.
- On a floured surface, roll dough to 1/4 inch thickness and cut into desired shapes with cookie cutters. Place 1 inch apart onto ungreased cookie sheets.
- Bake for 12 to 15 minutes in the preheated oven, until the edges are lightly browned. Cool on cookie sheets for a few minutes before transferring to wire cooling racks.

I was ready to say that OUR Santa loves the prepackaged dough cookies, however, this recipe is so simple, I think we can give it a try! LOL!! I guess it's about time we put those cookie cutters to use. :-)
